A lot of times, what gives a certain restaurant's pizza its particular taste is the type of cheese they use. Really, it should be the types of "cheeses" since many places have their own unique blend. Some places even have a secret recipe that they won't give out, even under pressure of torture. Here are some of the most commonly used and why they are the best.


Mozzarella


Without a doubt, mozzarella is the king of pizza cheeses. It originated in Naples and was originally made from the milk of water buffalos. These days, it is made from cow's milk and it is easier to work with. This cheese is packed with moisture and has a short shelf life. You have to use it pretty soon after buying it. There are lots of different mozzarellas available at the store and they all have different fat and moisture content.


Provolone


The second most popular cheese is provolone, which comes from the Neapolitan word 'prova,' meaning 'ball.' Provolone is firm and smooth with a golden color on the outside and a creamy interior. The key to this cheese's flavor is its smokiness. It is cured for several months and this gives it a pungent flavor. Like mozzarella, there are several different varieties that are commonly used.


Cheddar


Cheddar is a good cheese for mixing. It is rarely used by itself because it does not stretch well. Instead, it is usually mixed with other types of cheese. It varies from mild to sharp flavor and the whole range is good for making pizzas. The sharper types of cheddar aren't usually used because they don't blend as well.


Mixes


Most places use a mix of mozzarella and cheeses that are harder. They do this to add variety to the flavor and also cut down on the cost of the mozzarella. Every place has its own recipe (and some won't divulge!), but mixing cheeses include Parmesan, provolone, Romano, and dry jack.


Cheese-less?


It may surprise you to know that some folks prefer their pie with no cheese on top. This might seem like a wild new idea, but it has been the norm in Europe for years. Deep-dish pizza loaded with cheese is actually an American concoction. In Europe (including Italy), they often skip on the cheese so that the flavor of the other toppings can come through better.


If you're making your own pizza at home, you should experiment with cheeses. Even if you're buying a frozen one from the grocery store, hit the deli and pick up some different type of cheese. If you have just moved to a new area, and you have always had a special place where you went regularly for pizza, you are probably in search of a replacement. You might not find anything quite like what you had, but at least need a place where you like the menu, the price, environment, and taste.


You probably think the menu is a very important part of a pizzeria. Even though you and your family love pizza, that might not be what you order every time you go to your favorite pizzeria. You will likely want to find a place that offers a variety of salads, pizzas, pastas, and other favorite Italian dishes. Some days you might be in the mood for an appetizer platter rather than a whole meal, so perhaps hot wings, calamari, or onion rings could be some favorites on the menu for those times.


Another consideration as you look for a pizzeria to be your favorite will be the price. If it is a place you go to once a week or so, then you will want the cost to be reasonable, but of course you will not want something so inexpensive that the taste of the food is represented by the price being so cheap. If the food is the best you have ever tasted, then you might find the price to be worth it. It will just depend on what your budget can handle and how you balance taste and price.


Atmosphere is another important part of your choice of pizzerias. Of course sometimes the best food at the best price might be found at a dive. A dive often has its own atmosphere that makes it worth it. Part of the environment that is most important is cleanliness. A dive can be clean and be a great restaurant to go to. It will depend on what you really want in a restaurant. Environment or atmosphere can take many shapes, and sometimes it might be surprising what ends up being appealing. Whether it is the exposed brick of an old building with dim light or nostalgic music and detailed wood floors that seem to make the music all the more beautiful. You will know it when you see it.


After looking at these three areas, you might make your final decision based on taste, because taste is one of the most important aspects of any restaurant. The other three definitely come into play and can definitely make or break a restaurant, but if the restaurant you choose has nothing that jumps out at you in taste, then you probably will want to keep looking.

Pizza Types to Try If You Have Not

Pizza is a staple food around the United States. There are many different pizzas that you can make at home or purchase at a local pizzeria. Some types of pizzas will be more difficult to find depending on the area in which you live because some are just more popular in certain parts of the country. The four significant types that you can try are Margherita, Chicago style, New York style, and gourmet.


Margherita pizza is actually a very old recipe. It was one the first pizzas and was made in a very similar fashion to what we enjoy today, but it was made for a queen of Italy named Margherita. The crust is a thicker outer crust and a thinner center. The sauce and toppings for this ancient style has specific ingredients. It is important to use the plum tomatoes that come from Italy in order to make it authentically. The rest of the toppings include Buffalo cheese and Basil leaves. This combination of toppings forms the appearance of the Italian flag which is what was done originally for the queen when it won her love. This type should be cooked in wood fire at a very high temperature.


Chicago style pizzas are a unique type that is quite a bit different than other types. Some might call this type a deep dish. It is full of toppings- so much so that it is not able to be picked up to be eaten. Butter or oil is the unique ingredient in the crust. The sauce for Chicago style is a sweeter, chunkier sauce compared to other types. The toppings could be considered more of a filling since it is a layer of cheese, sausage, more cheese, and sauce. Some restaurants might even make it more of a stuffed pizza by putting a top crust on it making it more like what you think of as a pie. The baking of this type is a little different than most because many times the deep dish crust is pre-cooked before adding the filling/toppings.


New York style pizzas obviously came from New York, and they have special characteristics that are unique to them. What most people think of when they think of this type of pizza is the size and thinness of the crust. The pieces tend to be very big; so many people enjoy folding the pieces in order to eat them. The crust of the New York Style has one important attribute: it should have flour that is high in wheat gluten. There should just be a thin tomato sauce on this type and few toppings, perhaps only cheese. A brick oven is ideal for these pizzas to make the thin crust nice and crisp.


Gourmet pizzas are becoming popular today and may be a mix of some other types. New York style crust is a common crust for these types, but the sauce is less conventional. It can really be whatever the chef pairs with the toppings. Everything from alfredo, olive oil, to salad dressings can be used with a wide variety of toppings. Some of these toppings are vegetables and need to be cooked in advance so that the pizzas do not get too wet because of the large amount of water that the vegetables hold.


If you have not tried all of these varieties of pizzas, you should make a point to try each one at some point. Of course every pizzeria may interpret some pizzas in different ways, but the core principles should be similar.

Exploring Pizza Around the World

Whether you are visiting Japan or Australia, you will be able to find pizza in the country, but it might be a little different than American style pizzas. So if you visit another country you might be pleasantly or unpleasantly surprised if you are expecting cheesy pepperoni pizzas.


You may not have ever thought that they would serve pizza in India. They do, but it is quite different. Normal toppings for pizzas in India could include paneer which is a type of cottage cheese, pickled ginger, and mutton or sheep meat that is minced. This may sound strange, but if you were used to the flavors of India, perhaps these flavors would appeal to you.


A French style pizza sounds very fancy. It actually is topped with something called flambee which is actually fresh cream, onions, and bacon. As Americans you are probably accustomed to onions and bacon on pizzas, but the fresh cream is a little different unless you like Alfredo pizzas.


If you were to visit Japan, you might find the tastes quite different than what you are used to, but if you enjoy sushi rolls, you might enjoy the taste of Japanese pizzas. The toppings on these pizzas are Mayo Jaga which is a combination of mayonnaise, potatoes, and bacon, and then they also have eel and squid as toppings.


Russian pizzas are quite a bit different than American style. They enjoy red herring as a topping, but they also enjoy mockba which is a combination of ingredients. Mockba is tuna, mackerel, onions, sardines, salmon, as well as onions put together. If you like these fishier flavors, you might enjoy this Russian-style pizza.


Australia has another interesting pizza. It is a little more similar to what you may be used to if you eat American pizzas. Common ingredients on Australian pizzas are shrimp, barbeque sauce, and pineapple. Perhaps you have had the ham and pineapple combination that is popular in America. This type might remind you of it.


Other unique toppings for pizzas from around the world include curry on pizzas in Pakistan and coconut in Costa Rica. There are likely even more flavors around the world on pizzas, but these are just a few.


Sometimes if you go to another country you do expect different foods, but perhaps you do not expect a familiar food like pizzas to be different than what you know. If you visit these countries, you will likely have an option to perhaps have an American style, but you will also probably have the option to try pizzas with the specific country's style of toppings.


So while you are in America enjoy pizzas the way you are used to, but if you do some travel, be sure and try out another country's fair. It is important to remember that making pizzas did not start in America, so America really has no claim on the toppings. The main thing is that everyone enjoys what they like on their pizzas.
